  • ¼ cup Jindi Farm Dugout Track Macadamia Nut dukkah (available through our online shop)
  • 4 (about 200g each) skinless salmon fillets
  1. Sprinkle salmon fillets with Jindi Farm's Dugout Track Macadamia Nut Dukkah and press to coat. Heat a large non-stick frying pan over medium-high heat and spray with oil.
  2. Cook salmon for 2-3 minutes each side for medium or until cooked to your liking.
  3. Serve the salmon with rice, asparagus and some lemon wedges.
If you find the Dukkah doesn't stick to the salmon well - brush some dijon mustard on the salmon first then press it into a saucer of the dukkah.

This recipe works equally as well with chicken fillets or lamb cutlets. Just make sure you adjust the cooking time accordingly.
